Recipe: Angel Lush

Makes: 10 servings
1 can (20 oz.) crushed pineapple in juice, undrained.
1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling.
1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping.
1 pkg. (10 oz.) round angel food cake.
10 fresh strawberries.
1. MIX pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping.
2. CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with one-third of the pudding mixture. Repeat layers two times.
3. REFRIGERATE at least 1 hour. Top with berries just before serving. Store leftovers in refrigerator.
Variation - Lush Dessert Cups
Omit cake. Prepare pudding mixture as directed. Cover and refrigerate several hours or until chilled. Serve spooned into dessert dishes.

Comments: Took this to a birthday dinner party & got rave reviews. In addition, I frosted the cake with Cool Whip & served it on a thin layer of pureed strawberries.
I made my own angel food cake in a 9 X 13 pan and poked holes in it once it was cooled and poured the pudding mixture on top so it would soak down in the cake. It is even better the next day.
